A farm-to-table Italian restaurant where the menu shifts every few weeks based on what Texas farms are harvesting and what’s coming through the restaurant’s whole-animal butchery program. Handmade pasta is the constant—whether it’s duck confit agnolotti, octopus strozzapreti, or whatever the season happens to inspire next—while the housemade ricotta on sourdough flatbread is the starter that somehow ends up on every table. Reservations are a good idea; the secret has been out for a while.
