On the ground floor of the Jay Hotel, Prelude applies fine-dining technique to Southern cuisine. Chicken wings stuffed with dirty rice, sweetbreads served chicken-fried with plum sauce, catfish gnocchi built on the bones of chicken and dumplings. Tasting menu or a la carte, runs around $100 a head. Dress is whatever you arrived in.
