Austin’s first absinthe bar sits inside a long, narrow brick room on West 4th, pairing a serious absinthe program with a menu that feels closer to a French bistro than a Texas cocktail bar. Escargot in garlic herb butter, steak tartare, and duck confit mac and cheese anchor the food side, while the bar handles Sazeracs properly and pours a Death in the Afternoon that lives up to Hemingway’s warning.
