The rice comes from Iwate, Japan, and the difference registers immediately. At the four-seat omakase counter, there’s just one seating a night: house-made tofu in Kyoto soy milk, pristine seasonal nigiri, toro tartare topped with Kaluga caviar. There’s an à la carte menu if you miss the counter, but this is the kind of place where the full omakase is the reason to go.
