A live-fire restaurant inside the Hollywood Roosevelt, set in an 82-seat dining room anchored by a crackling hearth. The kitchen sends out a bulgogi-kimchi pizza with tableside-torched mozzarella and whole branzino bossam-style with lettuce cups, salsa macha, and herbs for wrapping. At the bar, the Dirty Work builds a dirty martini on koji-washed vodka, while the Shoots and Ladders clarifies an elote-inspired mezcal-rum pour over a single block of ice.
