A six-table Italian butcher's dining room on Melrose: wood-burning oven, marble countertops, and wine shelves stacked floor-to-ceiling. The Beef and Bone Marrow Pie — beef cheek, cippolini, and funghi under a thick pastry crust — is the signature order, with the Bistecca Fiorentina (50 oz dry-aged bone-in porterhouse) and Tomahawk Pork Chop built for the table to share. Monday through Thursday, a whole roasted pig's head is offered once a night: presented tableside, then carved into crackly, fatty chunks.
