Basque pintxos on 9th Ave since 2008, built around a tightly edited menu of small plates that balance tradition with quiet invention. Pulpo carpaccio arrives plated like a blooming flower, and a suckling pig that’s stayed on the menu for over a decade anchors the room. The kitchen threads in global accents without announcing them—rau ram in boquerones, uni and enoki folded into bomba rice.
