A six-seat omakase counter in Tarzana open Friday through Sunday, serving about 20 courses of precision nigiri: thick cuts, lightly seasoned rice, fresh-grated wasabi, with fish sourced by a chef who imports for some of the top sushi spots in LA. The nightly selection shifts based on what is best, with signatures like saltwater eel brushed with sauce reduced from its own bone or triggerfish crowned with its own liver.
