About Discada

The entire operation revolves around a single dish: discada, a northern Mexican specialty of beef, pork, bacon, and roasted poblano peppers slow-cooked together in a tractor plow disc until the flavors become inseparable. Michelin recognition followed a food truck built on doing one thing exceptionally well. Served on yellow corn tortillas with pineapple slaw and fresh salsa, the taquitos have a way of disappearing faster than expected—order accordingly.
