The only Michelin-starred Spanish tapas restaurant in NYC, where razor clams a la plancha, creamy eggs buried under sea urchin and walnuts, and braised oxtail keep people coming back and rebooking. Bar Jamón next door offers a looser wine-bar counterpart with the same kitchen and an all-Spanish list. The room is tight and reservations are not optional.
