East Austin, Austin · restaurant
No brisket. The school bus on Webberville Road built its whole identity around what Central Texas BBQ typically ignores: Akaushi tri-tip, slow-smoked coppa, baby back ribs, and cowboy beans chunky enough to almost be a meal on their own. There’s one dessert (chocolate mousse with pecans, caramel, and orange zest) and it’s worth saving room for.
Pork neck cut slow-smoked until tender — richer than pulled pork, a sleeper hit
Half rack of slow-smoked ribs served uncut — East Austin BBQ without the brisket
Smoked Akaushi beef tri-tip, tender as a steak — the move on a menu with no brisket
