The concha here is crisp-edged, cinnamon-dusted, and filled with vanilla chantilly—closer to a pastry remix than the soft, familiar version most people grew up on. A Franco-Mexican bakery that never bothered asking permission, with the La Odette (kouign amann filled with cajeta) as its clearest statement of intent.
