A focused room in Palms built around eight Tokyo-style Neapolitan pies, each crimped by hand to give the crust a range of textures. Soft and airy at the center, blistered and charred at the edge. The Patate arrives topped with Astrea caviar, arancini come pooled in pomodoro before the pies land, and the gelato at the end closes the loop neatly.
