Little Tokyo, Los Angeles ยท restaurant
A Michelin-starred basement omakase. Navigate through the hotel lobby, buzz in, and take the stairs to a 10-seat hinoki counter where fish is aged and cured in classic Edo-Tokyo style. Reservations drop on the first of the month and disappear within the hour; on Fridays and Saturdays, the eight-seat Premium Room runs a more exacting version of the same program. The seared saba handroll and fatty tuna dusted with sea salt snow are the two courses regulars keep booking around.
