About Holbox

The most decorated seafood counter in the city is a market stall inside Mercado La Paloma. Michelin-starred, no tablecloths, no alcohol. The menu rotates daily based on what's fresh from Baja, the Gulf, and local boats: bluefin tuna ceviches, kanpachi tostadas, spot prawn aguachiles, all on nixtamalized heirloom corn from Oaxaca.
