An artisan panadería in Long Beach where masa madre (wild fermented sourdough) and stone-oven baking meet fresh nixtamalized corn masa. The menu rotates with what's seasonal, but the heirloom corn works its way into everything from sourdough loaves to masa-based pastries. One of the few bakeries in SoCal treating maize as seriously as wheat.
