Exposed brick, candlelight, and bartenders in lab coats give it just enough theater without tipping into cosplay. The cocktails skew herbal, smoky, and strong. Less vodka soda, more “trust me.” It’s a date-night classic for a reason: dark enough for secrets, loud enough to linger.
